Las distintas categorías de aceite, según su nivel de pureza y acidez son: Extravirgen, Virgen, Virgen Corriente. La menor participación de mercado de la industria chilena se explica en parte por su orientación al segmento Extravirgen, distinto al que tienen los actores importantes del mercado, lo cuales se han enfocado más en el volumen que en la calidad. Además de estas, existen otras categorías que no son aptas para el consumo: Lampante, Refinado, Aceite puro de oliva, y Aceite de orujo de oliva.
